It sounds like the PTA president is a bit of a control freak. When someone steps up to chair something, that person is responsible for completing the task, not running to the president for everything. If that was the case, the president should be doing it all. Don’t walk away from the PTA, they do a lot of good for the kids and the school and they definitely need volunteers.

As for the box tops, we collect them every quarter and give a pizza party to the class that collects the most. You can only send the box tops into the company twice a year and in return you will get a check for the school. (I don’t have the address in front of me right now).

This is how my school does it:
We keep boxes in each room for the students to bring them in. We send a letter home to parents about 2 weeks before the end of each grading period to remind parents about the deadline. Our box top coordinator collects them and counts them for each room. We give a pizza party for the class that collects the most during the quarter. When you send the box tops in, they have to be put into groups of 50 (they don’t have to be trim perfectly, but we do ask parents not to send in the whole side of the box or whatever the top is on). You can only submit them twice a year (I believe its Dec and Jun, but don’t hold me to that), and then your school gets a check for the money.

The first thing you do is contact your sons teacher and principal. Express politely what has occurred ( you are probably not the only one she has done this to ) Express that you are thinking of resigning from the PTA and what to do with the box tops.
If this needs to go further, then your sons teacher and principal can take any further action required.
